Bombay Potatoes

So many different ways of making potatoes but this recipe is one of my favorites because of all the flavors and it’s also super fast to make so it’s great for weeknights!

Ingredients

  1. 2 tsp ground cumin
  2. White potatoes washed, peeled and cut in cubes (About 2 medium potatoes)
  3. 3 tbsp olive oil
  4. 2 tsp red curry paste
  5. 1/4 tsp turmeric powder
  6. 1 1/2 tsp lemon juice
  7. Salt to taste

Instructions

  1. Heat the oil in a pan and add the cumin.
  2. Add the potatoes and mix well. Cover with lid and cook on medium heat for 10-12 minutes until potatoes are cooked. Stir occasionally.
  3. Add curry paste, turmeric powder, lemon juice and salt. Mix well and keep cooking for a minute or two while stirring occasionally.
  4. Enjoy!
