Lemon Orzo Soup

We are still in soup season, but it’s ending soon so taking advantage of sharing my best soup recipes! This lemon orzo soup is basically comfort in a bowl. It’s perfect for when you have a cold and need something to make you feel good. It’s filled with lots of veggies and gives you all the vitamins your body needs to help you get through.

Ingredients

  • 1 Tbsp Olive Oil
  • Salt & Pepper
  • 3 Garlic Cloves, minced
  • 1 Onion, diced
  • 3 Carrots, peeled and diced
  • 3 Celery stalks, diced
  • 1/2 Tsp Thyme, dried
  • 5 Cups of Chicken Broth
  • 2 Bay Leaves
  • 3/4 Cup Orzo Pasta, uncooked
  • 1 Rosemary spring
  • Juice of 2 Lemons
  • 2 Tbsp Parsley, chopped

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add garlic, onion, carrots and celery. Cook, stirring occasionally, until tender, about 3-4 minutes.
  2. Stir in thyme until fragrant, about 1 minute.
  3. Whisk in chicken broth, bay leaves and 1 cup water. Bring to a boil.
  4. Stir in orzo and rosemary. Reduce heat and simmer until orzo is tender, about 10-12 minutes.
  5. Stir in lemon juice and parsley. Season with salt and pepper, to taste.
  6. Enjoy!
