I absolutely love Italian! I would probably be eating Italian food every day if it wasn’t for all the carbs…. One of my favorite recipes that I discovered on Pinterest a few months ago is Penne with Spinach and Sun-Dried Tomatoes. It’s really easy and fast to make and tastes amazing!!!
Ingredients

1 Jar of Sun-Dried Tomatoes with Oil (I use the Pastene brand and the jar is about 7 oz)

3 Garlic Cloves, minced

1/4 Tsp Salt
-
Paprika
-
1 Cup Half and Half (half milk, half cream)

1 Cup Asiago Cheese grated (if you don’t have Asiago, use Mozzarella or Parmesan)

Penne Pasta

2 Cups Spinach (or more if you like, I usually go by eye while I’m cooking which gives me about 3 cups…
Instructions

In a large pan or Wok, heat 2 tbsp of oil from sun-dried tomatoes.

Add sun-dried tomatoes (if too big, cut them in half) and minced garlic on medium heat. Season with paprika.

Add 1 cup of half and half and 1/4 tsp salt and bring to boil.

Add grated Asiago cheese and stir for about 30 seconds to melt the cheese.

Reduce the heat from boil to simmer to make sure all the cheese melts. At this point, if sauce is too thick, add another 1/3 cup of half and half and stir.

Cook pasta according to package directions.

Add pasta to the sauce with spinach and mix everything.

Cover with the lid and let the pasta sit to allow spinach to wilt on low simmer.

Once spinach has wilted, stir everything together and taste.
