Pork Schnitzel with Apple, Dill and Parmesan Salad

I absolutely love this recipe because it’s so easy to make and the salad tastes so fresh and is addictive.

For the Pork
  • 2 Pork Cutlets
  • 1/4 Cup Parmesan
  • 1 Tsp of Thyme, dried
  • 1/2 Cup of Breadcrumbs
  • Salt & Pepper
  • 2 Tbsp Mayonnaise
  • Olive Oil
For the Salad
  • 1 Gala Apple, cut into cubes
  • 2 Mini Cucumbers, sliced
  • 1 Tbsp of Fresh Dill
  • 1 1/4 Tsp Dijon Mustard
  • 2 Tbsp White Wine Vinegar
  • 2 Tsp Sugar
  • 1/4 Cup Parmesan
  • Spring Mix



Pork Schnitzel
  1. In a shallow dish, combine breadcrumbs, Parmesan and thyme.
  2. Pat pork dry with paper towel and season the pork with salt and pepper.
  3. Coat each side of the pork with mayonnaise and then dip both sides in the breadcrumbs mixture pressing firmly so it sticks.
  4. Heat large non-stick pan over medium heat. Add generous drizzle of oil. Add pork and fry until each side is golden-brown and pork is cooked through.
  1. In a medium bowl, whisk mustard, vinegar and sugar.
  2. Add apples, cucumbers, spring mix, dill and Parmesan.
  3. Toss to combine and season with salt and pepper.
  4. Enjoy!
