I’m a huge fan of quinoa because it’s a healthy alternative to pasta. It’s low in carbs and fills you up pretty good. This recipe is great because it’s low in carbs, healthy gluten-free and vegetarian.
- 8 Oz Mushrooms, sliced
- 3 Garlic Cloves, minced
- 1 Tbsp Butter, unsalted
- 1 Tbsp Olive Oil
- 10 Oz Spinach
- 2 Cups Quinoa, cooked
- Salt & Pepper
Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms and garlic and saute over medium-high heat for about 5 minutes until mushrooms are cooked.
Season with salt and pepper.
Add spinach to the skillet and stir until spinach begins to wilt.
Add 2 cups of cooked quinoa to the skillet. Stir all ingredients together.
