Spinach and Mushroom Quinoa

I’m a huge fan of quinoa because it’s a healthy alternative to pasta. It’s low in carbs and fills you up pretty good. This recipe is great because it’s low in carbs, healthy gluten-free and vegetarian.


  • 8 Oz Mushrooms, sliced
  • 3 Garlic Cloves, minced
  • 1 Tbsp Butter, unsalted
  • 1 Tbsp Olive Oil
  • 10 Oz Spinach
  • 2 Cups Quinoa, cooked
  • Salt & Pepper


  1. Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms and garlic and saute over medium-high heat for about 5 minutes until mushrooms are cooked.
  2. Season with salt and pepper.
  3. Add spinach to the skillet and stir until spinach begins to wilt.
  4. Add 2 cups of cooked quinoa to the skillet. Stir all ingredients together.
  5. Enjoy!
