Turkey Ramen Soup

Oh the weather outside is frightful…so let’s make soup! Soup season is definitely my favorite season! When the weather outside is freezing, there’s nothing like a good soup to get you all cozy and warmed up! I absolutely love ramen soup because it’s different then your traditional soup that you eat. It’s good and filling all the while warming you up inside. So here’s one of my all time favorite ramen soup recipes!

  • Minced Turkey
  • 2 Cloves of Garlic, minced
  • 1 Tbsp Ginged, minced
  • 1 Tsp Red Chili, diced (use less or more depending on how spicy you want it. 1 tsp is usually spicy)
  • 1 Shallot, diced
  • 2 Tbsp of Chicken Broth
  • 1 Tbsp Soy Sauce
  • 1 Cup of Kale, chopped
  •  1 package of Udon Noodles
  • 4 Tsp Sesame Oil
  • 1 Carrot, grated
  • Salt & Pepper
  • Olive Oil
  • 3 Cups of Water

  1. Heat a medium pot over medium heat. Add 3 tsp sesame oil and shallots. Stir until softened and add the garlic, ginger and chili. Cook until tender.
  2. Increase heat to medium-high. Add drizzle of olive oil and minced turkey with carrots. Cook breaking the turkey apart until no longer pink. Season with salt and pepper.
  3. Add water, chicken broth and soy sauce. Bring to boil and reduce heat to medium. Add kale and noodles. Cook stirring together until kale is tender and noodles separate. Season with salt and pepper.
  4. Divide soup between bowls and drizzle remaining sesame oil. Enjoy!
